After a short period of skin contact, the fruit is gently pressed and spontaneously fermented in 750-litre Tava amphorae. A small amount of fresh apple must is added before bottling, allowing secondary fermentation to take place in the bottle and create its natural bubbles.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eCrisp and refreshing, with bright acidity, pure apple flavours and a lovely texture. Unfined, unfiltered and made without added sulphites, with only 1,000 bottles produced.
