Kamara

The story of the Kioutsoukis family is one of nature, roots and bold change. Leaving city life behind, they chose to build a different kind of life on the slopes near Thessaloniki, in northern Greece, a region whose winemaking heritage reaches back to antiquity. There, they planted 11 hectares of vines and founded Kamara Winery: a family estate rooted in Greek tradition, but guided by a distinctly modern natural wine philosophy.

The vineyards are planted mainly with indigenous Greek varieties, including Assyrtiko, Malagousia, Roditis and Xinomavro, alongside Limnio, Muscat and Moschofilero. These grapes are not treated as heritage objects, but as living, expressive varieties that can speak clearly when farmed with care. For Kamara, working with native grapes is a way of preserving cultural memory while making wines that feel vibrant, open and very much alive today.

The family’s approach goes beyond organic farming. Their work is shaped by permaculture, biodiversity, hand labour and a deep trust in natural processes. The vines grow on low hillsides at around 140 metres elevation, where a steady northern breeze helps preserve freshness. The soils vary from clay and sand to small stones and schist, giving the wines texture, energy and ageing potential.

In the cellar, the goal is not to control nature, but to accompany it. Fermentations happen with indigenous yeasts, no oenological additives are used, and the wines are bottled unfiltered, with very little or no added sulfur. Many cuvées spend extended time on the skins, while ageing takes place in old barrels, amphorae or stainless steel depending on the grape, parcel and character of the vintage.

The result is a range of wines that feels expressive, vital and honest. A white blend of Malagousia and Assyrtiko can be aromatic and mineral; a skin-contact wine can be textured and spicy; a pét-nat can be playful and alive; and Xinomavro can show depth, grip and dark-fruited intensity. Across the range, the same thread remains: purity, freshness and a direct connection to the land.

Kamara’s philosophy is beautifully summed up in their own words: “Nature is the real winemaker, man is her assistant.” Their wines carry that belief clearly. They are modern Greek natural wines with old roots, shaped by family, place and a quiet confidence in letting the vineyard speak.
