Inspired by the idea of piquette but made with wine instead of water, the result is vibrant and textured, with citrus peel, apple, and slightly spicy characteristics. After one year of aging, fermentation re-started with must gives it a fine, lively fizz. Bottled unfiltered, unfined, and without added sulfur.
