Togo 2024

A textured white wine made with short skin contact from three native Veneto grape varieties.

Vespaiola, Glera Lunga and Pedevenda come from approximately fifty-year-old vines rooted in volcanic soils rich in basalt, iron and silica. Each variety is vinified separately: the Vespaiola undergoes ten days of carbonic maceration, while the destemmed Glera Lunga and Pedevenda spend five days on their skins. Following spontaneous fermentation, the wine ages for six months in concrete tanks. Pear, quince, lemon peel, white flowers and wild herbs unfold over a gently textured palate with vibrant acidity and a long, saline mineral finish. Taut and energetic, yet layered and beautifully balanced.

Bottled unfiltered, unfined and with no added sulphur.
