Bianka and Daniel Schmitt are among the rising stars of the natural wine world. Based in Flörsheim-Dalsheim, in the southern part of Germany’s Rheinhessen region, the couple has been producing expressive, low-intervention wines since founding their winery in 2012.

Their story is one of love, tradition, and intuition. Daniel comes from a long line of winemakers – he is the fourth generation to work the family vineyards. Bianka, originally from Budapest, Hungary, grew up watching her grandfather make unfiltered wine in his garage — a humble but formative experience that sparked her passion. The two met during harvest, and their connection quickly turned into both a personal and professional partnership.

From the beginning, their shared philosophy was to work in total harmony with nature. The Schmitts farm biodynamically and are Demeter-certified, meaning their vineyards are managed without synthetic chemicals, and with a deep respect for soil health, biodiversity, and lunar cycles. Their vines grow on a mix of limestone, loess, clay, and gravel soils, giving their wines distinct minerality and texture.

In the cellar, they practice minimal intervention: wild yeast fermentations, no fining or filtering. Their wines are allowed to develop slowly, often spending extended time on the lees or aging in neutral barrels. The result? Wines that are alive, expressive, and full of character.

The Schmitt portfolio includes a broad range — from fun, juicy liter bottles and playful Pet-Nats to more serious skin-contact whites and elegant reds. They even make natural ciders, showing their creative and boundary-pushing approach to fermentation. Each bottle, many of which feature their now-iconic blue label, is a reflection of their land, their love, and their philosophy.
