Quantum

Quantum is the bold solo project of Florian Schuhmann-Irschik, based in Maissau, in Austria’s Weinviertel. Working only with organic or biodynamic grapes, Florian makes naturally fermented, unsulfured wines that often include skin contact, unexpected blends and a deliberately free approach to style. These are wines made outside the usual categories, with curiosity and instinct leading the way.

The Weinviertel is best known for Grüner Veltliner, but Quantum looks at the region from a more experimental angle. Florian works with field blends and individual varieties such as Riesling, Večerka, Zweigelt and Portugieser, allowing each wine to find its own shape rather than forcing it into a familiar Austrian template. The result is a range that feels playful, raw and full of movement.

In the cellar, the approach is direct and low-intervention. Fermentations are spontaneous, sulfur is avoided, and the wines are bottled unfiltered. Many cuvées spend time on the skins, gaining texture, colour and aromatic depth. Nothing feels overly polished; instead, the wines keep their edge, energy and sense of discovery.

Quantum’s visual world is just as distinctive as the wines themselves. The striking, artist-designed labels give each bottle its own identity, turning the range into a collection of small, expressive statements. But behind the playful surface there is a clear idea: to make wines that are honest, alive and impossible to confuse with anything else.

Florian’s work is part of a new Austrian natural wine wave that is less concerned with tradition as a fixed rulebook and more interested in freedom, transparency and personal expression. Quantum is experimental, yes, but never empty provocation. These are vivid, characterful wines made for curious drinkers.
