The five days of skin fermentation provide delicate tannins, subtle spiciness, and a tea-like texture, while the nine months of aging in old Burgundy barrique barrels add depth. Dried citrus, herbal, stone fruit, and subtly honey-spiced notes unfold with lively acidity and a mineral, salty finish.

Bottled unfiltered, unfined, and without added sulfur.
