Fermentation began in old oak barrels and finished in the bottle, after which it spent 40 months on lees without disgorgement. The result is a delicately sparkling wine with notes of citrus peel, baked apple, a slight yeasty and nutty character, balanced by vibrant acidity and mineral freshness. As it is an undisgorged pét nat, it is advisable to open it carefully, as the wine can easily overflow the bottle.

Bottled unfiltered, unfined, and with no added sulfur.
