Non Tradition White 2025

Non-Tradition is made entirely from Grüner Veltliner grown in two separate vineyard plots with distinctly different characters. One consists of old vines, over 40 years of age, rooted in lacustrine limestone and quartz, while the other is a steep schist slope planted using Christian’s distinctive double-plant system.

The grapes are harvested by hand and pressed very gently without maceration, before fermenting and ageing in large oak barrels. Each vineyard reveals a different side of Grüner Veltliner: the limestone plot brings tension, precision and mineral character, while the schist vineyard contributes a richer, more exotic and voluptuous dimension.

Each would be fascinating on its own, but together they gain layers, length and aromatic depth – in Christian’s own equation, 1+1=3. Complex and concentrated, yet lively and effortless. Bottled unfined and unfiltered, with no added sulphur.
