Sauvignon from Opok 2023
A precise and elegant Sauvignon Blanc where Alpine freshness meets the depth of long aging.
The wine comes from Styria's characteristic Opok soil — a mixture of limestone, clay, and marl — which gives it a pure and strongly terroir-driven character. The hand-harvested grapes are gently pressed and then spontaneously fermented in large oval oak barrels, followed by approximately twenty months of aging on fine lees in neutral oak barrels. Despite its depth and layered texture, the wine remains surprisingly fresh and energetic, with notes of citrus peel, elderflower, white-fleshed peach, and wet stone, vibrant acidity, and a long, saline finish.
Bottled unfiltered, unfined, and with no added sulfur.
