UMAMI 2021

An aromatic, deep and especially complex wine on the border between white and orange, made from Traminer vines in Moravia.

The grapes come from 15- to 40-year-old vines and spend four days on the skins, bringing fine texture, spice and a gentle tea-like structure. The wine then ages for two years in a large used Stockinger barrel, developing calm depth, layered complexity and a beautifully integrated character. Rose petal, exotic spice, dried citrus, tea, ripe apple and herbal notes appear with fresh acidity and a surprisingly precise finish.

True to its name, this is not only aromatic, but also saline, full and umami-like, at once generous and controlled.

Bottled unfiltered, unfined and without added sulphur.
