Gamay spends two weeks on the skins, while Mondeuse and Pinot Noir spend three weeks, giving the wine layered spice, juicy fruitiness, and a delicate structure. One year of tank aging preserves the wine's purity, with lively acidity and an energetic character. Cherry, wild berry, herbal, and black pepper notes unfold with a vibrant, salty finish.

Bottled unfiltered, unfined, and with no added sulfur.
