Cerasus 2025

Cerasus is a fresh, naturally sparkling fruit wine made from organic Goldrush apples and 8% sour cherries. The apples spend 18 hours on their skins before gentle pressing and spontaneous fermentation in 320-litre Tava amphorae. Before bottling, fresh organic sour cherry juice is added, triggering a second fermentation in the bottle and creating fine, natural bubbles.

Bright, juicy and refreshing, combining the crisp acidity of Goldrush apples with the tart, red-fruit character of sour cherries. Unfined, unfiltered and made without added sulphites. Best enjoyed well chilled and opened with care.
