Three days of skin contact provide a delicate texture and subtle tannins, while aging in large, 3000-liter Gamba barrels preserves the wine's freshness and slowly builds its subtly oxidative complexity. Dried citrus, herbs, apple notes, and tea unfold with energy and a mineral tension. Bottled unfiltered, unfined, and with only 5 mg/l of added sulfur.
