UVA // Les Volatiles
In the coastal town of Sète, in southern France, Pablo and Mathilde make vibrant, small-batch natural wines under the Les Volatiles label. Their project is rooted in a place that already carries its own story: a former mosque transformed into a tiny urban cellar, where wine is made close to the sea, the city and the lively Mediterranean rhythm of the region.
They farm around 2 hectares of vines themselves and complement their own fruit with organically grown grapes from a small circle of trusted friends nearby. This allows them to work on a human scale while staying connected to a wider network of growers who share their values: careful farming, healthy soils and respect for the personality of each grape and vineyard.
Everything is done by hand, from harvest through bottling. Fermentations are spontaneous, the wines are bottled unfiltered, and no sulfur is added. The cellar work is simple and direct, leaving room for the fruit, the vintage and the natural energy of fermentation to shape each cuvée.
The Les Volatiles range moves freely between pét-nats, fresh whites, skin-contact wines and juicy reds. The wines are playful and immediate, but never careless: they balance Mediterranean generosity with freshness, texture and an easy, sociable drinkability. Each release is limited, personal and made to be opened rather than stored away.
UVA / Les Volatiles is a tiny project with a strong sense of place. It brings together urban energy, coastal light, organic fruit and a natural approach that keeps every wine alive, direct and full of character.
